What is La Laiterie?

La Laiterie, which means “the dairy” in French, is a Breton-inspired café and bakery in Jonesboro, Maine, rooted in craft, hospitality, and connection. Drawing inspiration from the culinary traditions of Brittany, a region in northwest France celebrated for its breads, butter, and seaside fare, we bring a taste of that heritage to our coastal community.

We are embarking on an exciting new chapter— continuing freshly baked breads and croissants, now crafted at scale, alongside a daytime bistro menu. From a morning croissant and coffee, to oysters and steak frites in the afternoon, La Laiterie is designed to be more than a café: it’s a gathering place for good food, meaningful community, and everyday joy.

Who We Are

Hello! We’re Ross & McKenna, partners in both life and business.

At the heart of everything we do is Chef Ross Florance with nearly two decades of experience in some of the world’s most celebrated kitchens — Eric Ripert’s Le Bernardin (NY), Noma (Denmark) and Le Chateaubriand (Paris). After years in fine dining, he taught himself the art of breads, pastries and crepes. His cooking is rooted in French tradition, shaped by global experience, and always inspired by nature.

With Florance at the heart, we have McKenna Koledo at the head, bringing a background in marketing and business honed through years of account management at top marketing agencies in LA and NYC. She oversees all operations, marketing, and communications at La Laiterie—ensuring everything runs smoothly and the guest experience is seamless and welcoming.
